A traditional Middle Eastern frittata

Enjoy this delicious Middle Eastern take on the traditional frittata.


  • 1 kg frozen chopped spinach, thawed
  • 6 eggs
  • 1 500g container cottage cheese
  • 2 cups grated mozzarella cheese
  • 1 tsp salt


Preheat oven to 175 degrees C and grease a 20×30cm pan or two 20cm pie pans.

Squeeze as much water as possible out of the spinach.

In a large bowl, mix spinach, eggs, cheese and salt.

Transfer the mixture into the prepared baking dish and bake for 45 minutes to 1 hour, until the top is golden brown and the inside is cooked through.
