Lawyer turned ice cream pro

Maths wiz, scientist and lawyer Roz Kaldor-Aroni has added a new title to her list.

AS a child, community member Roz Kaldor-Aroni was a maths and science wiz. Excelling at school, she went on to study law, applied chemistry and computer science at university which led to successful careers in all three areas.

Originally a lawyer, Kaldor-Aroni then went on to become a senior manager for Telstra before co-founding not-for-profit medical research organisation AUSiMED, where she was CEO for six years.

A sweet tooth and at times a chef, Kaldor-Aroni always had a passion for food.

Wanting to create a family dessert that everyone would love, the foodie began learning how to make the popular frozen dessert.

In searching for healthier recipes and ice cream brands that catered to her own health problems, Kaldor-Aroni was disappointed to find many so called “healthier” ice cream options compromised on flavour and texture, and used numerous chemicals.

Using her knowledge of maths, chemistry and physics, along with a gift from her family – a textbook on making the frozen dessert – Kaldor-Aroni set out to become the ultimate ice cream connoisseur for those looking for healthier and alternative options.

She studied gelato making in Australia and Italy and ice cream manufacturing in Canada before starting up her own brand, Elato Artisanal Ice Cream.

Mastering the tricks of the lactose-free ice cream trade, the scientist realised she could achieve both a three-star health rated ice cream and a granted patent, while also extending her range of flavours.

Kaldor-Aroni has ensured that 50 per cent of the brand’s profits support food rescue non-profit organisation OzHarvest, which saves surplus food from landfill and repurposes it to help those in need.

Both vanilla and chocolate flavours are kosher, with a coffee flavour to join them soon.
